Deliciating Sundays – Kick Off Pancakes

Welcome everyone to my new series: “Deliciating Sundays”

This beautiful word, to deliciate, found in a very old English dictionary, means to truly enjoy something and that’s what all this is about.

Don’t you just love to wake up on a Sunday morning, with the light peaking in, knowing you have all day to do anything you want? {Well, as long as you are one of the lucky ones that do not have to work on Sundays…}

That’s why I love starting off this day with a very special breakfast and I’ll try to post it every Sunday.

So for a start I introduce to you:

Cinnamon Orange Pancakes

{adapted from MrBreakfast}

Ingredients:

1 cup whole wheat flour
3/4 cup all-purpose flour
1 cup low-fat milk
3/4 cup fresh orange juice
1 large egg or egg substitute equivalent
2 Tablespoons Wheat germ
1 and 1/2 Tablespoons sugar
2 teaspoons baking powder
1 teaspoon orange zest or finely grated peel
1 teaspoon cinnamon
2 pinches of salt

Preparation:

Mix dry ingredients in a large bowl. Beat egg lightly in a seperate bowl and add wet ingredients. Combine everything until smooth.

Heat butter/oil/cooking spray in a large pan. Drop dollops of batter into the pan and fry until centre starts to bubble. Flip and cook until evenly brown on each sides.

Serve with a bit of maple syrup or homemade jam. 🙂
